Fresh spirulina cheesecake is a fresh and creamy dessert, a truly irresistible dessert, the perfect dessert for this summer. It is very simple to prepare, you can also freeze it and take it out when necessary.
Here is our recipe.
4 jars of white yogurt 125 gr.
500 gr. of ricotta
250 gr. of dry biscuits
90 gr. of sugar
100 gr. of butter
8 gr. of isinglass
10 gr. of fresh spirulina
Preparation for the base
To prepare the base of the fresh spirulina cheesecake, start by grinding the biscuits finely.
Melt the butter in a saucepan and blend the melted butter with the powdered biscuits you have obtained.
Provide a 20/22 cm diameter hinged cake pan and line the bottom with parchment paper.
Put the mixture of biscuits crumbled and amalgamated with butter on the bottom of the cake tin.
Compact the dough at the bottom of the cake pan to create a solid layer.
Put the cake tin in the fridge for 10 minutes.
Preparation for the cream
Put the isinglass in cold water for at least 10 minutes.
In a bowl, whisk the yogurt with the sugar and then add, slowly, the previously sifted ricotta.
The amount of sugar is optional, you can increase or decrease it.
Allow the isinglass to cool down and add it to the mixture.
Finally add 10 gr. of fresh spirulina.
Mix the ingredients with a pair of electric whips at low speed.
Pour the cream on the biscuit base.
Distribute the cream evenly, then put in the refrigerator for at least 5 hours.
Your cheesecake is ready to be served.
